Gluten free muffins

For breakfast I had half an avocado. And plenty of spring water.

Lunch was so great! Went to Charlotte City Club where famous chef Charles makes a farm to table menu! 


It was great to meet him and acknowledge him for his work. 

I enjoyed the most delicious plate! Sweet potato fries with risotto and salmon! Topped with fresh local greens. 

Also drank plenty of green tea. We chatted with a realtor as we scout locations for the Earth Cafe! 

Had a quick radio appearance! 53 days to book launch! 

Later made some chocolate peanut butter cups! Recipe from the new book! 

Then made muffins! But get this... These are gluten free! You know when I first discover a new recipe that is epic I will eat A LOT of it because its just so amazing! This is the chocolate peanut butter cup. I am so happy to say you cannot tell these are gluten free. This is a big deal. You guys will love them!!! 

And I are 2 blueberry muffins! Also gluten free! My philosophy is that if you can make them gluten free and still taste good - they may as well be gluten free as they are easier for the digestive system! 

If you eat junk food, just make your next meal a juice or lemon water! Keep moving forward to the healthy path.

Ate lots today

Started today with a greens drink, this is Phresh greens so I just mixed a teaspoon in a cup of water. Great for on-the-go lifestyle. 

Then I had organic waffles again (made by my friend Amy) work coconut milk ice cream, blueberries and maple syrup. 


Drank lots of water today, and lemon water, and kombucha. 

Lunch was this amazing feast including this salad of spinach, rocket, cucumber, avocado, peppers with an avocado and lemon juice dressing. Also had home fries cooked with onion and peppers, with paprika and turmeric. 


And with quinoa with spices paprika, cumin, turmeric, topped with peppers, avocado and parsley. 

This was my plate, so good! I had two of them! 


Afternoon snack I had these BBQ chips made with quinoa and organic corn, these are non Gmo however not organic and does have sugar. Not the best but definitely an upgrade from regular chips that are Gmo. 

Painted my nails with this natural nail paint! Brand is Adorn Nail Paints and they are formaldehyde free! Plus animal cruelty free! 


Dinner was left over quinoa from today! And I added some parsley, avocado and sprouts for a raw element.


Seemed to have eaten a lot today, my body has been craving a lot of foods since I am going through a major transformation process!

Eating in Charlotte

Spent today in Charlotte working with Dr Leonard Coldwell. The cancer summit is happening. 

Started the day with organic waffles yum! Will share the recipe on website soon! Made with organic flour, flax meal, coconut flour! 

Lunch was an avocado - I love eating Wholefoods! So fulfilling! 


Later had another lunch that was this salad with rocket, grated cabbage, avocado, tomatoes and avocado. So yum. With a avocado and lemon dressing - fresh! 


Afternoon snack was this organic nectarine. So amazing. 

Dinner was potatoes! With onion, peppers and parsley. So fulfilling and grounding. 

With organic free range chicken wings. I needed this protein and vitamin C after a full on day of work!

Said I would have green drink today, will make it happen tomorrow, plus a lemon water - am craving some alkalization.

Day of traveling Florida to North Carolina

Was a long day of traveling from Florida to Charlotte in North Carolina.

Started the morning with a big breakfast of organic eggs and an organic chicken apple sausage on a spinach wrap. With organic ketchup. 


Had a bit of chia seed kombucha.


Was bit sad about leaving florida and the divine weather, so went to Wholefoods which always cheers me up! Had a rice milk ice cream and organic candy. Huge upgrade from my previous habits of eating so much junk food.


This organic candy is upgrade from corn syrup candy. A piece of fruit would be major upgrade from this. 


2 days left to enter the huge Earth Diet transformation giveaway! Even Wholefoods wants a bite ;) 


Didn't eat anything at the airports. No real healthy options. So had a green tea. 

Found my driver in Charlotte holding "Miss Earth Australia" sign! Love it. 

At Wholefoods for dinner! This avocado and nectarine. So fulfilling. 

After that I had a green tea and some sweet potato chips.

I also played with my pit bull friend Karma. 

Now in stretching my legs as I write this blog to make sure I do my hour of body work. I am working with Dr C this week. It's going to be great. Cancer Summit is happening. Providing people with recipes to nourish their body and assist the healing. 

I am due for a juice or Phresh greens so tomorrow will make that happen.

Labor Day eating!

Spent today Labor Day in Florida USA Ft Lauderdale. Here is what I nourished my body with:

Had a big breakfast starting with organic eggs and spinach, with organic ketchup. 


Then had French toast! Organic bread dipped in organic egg. Topped with drizzle of maple syrup. 

I had some work to do on the computer, and had a quick work break snack of this plant based/vegan ice cream made with coconut milk. The brand is So Delicious.

I got to Skype my family who live in Paris today! So excited to see them next year while on my book tour! 


For lunch I had this organic chicken sausage in a spinach wrap with organic ketchup. Great for sausage lovers. 

Had my favorite ice cream for afternoon snack right before my massage! They so massages in Wholefoods now! It's awesome! This ice cream is by the brand Rice Dream made with rice milk. Covered in chocolate and nuts.  

I also had this coconut milk chocolate and peanut butter ice cream by So Delicious. 

Ft Lauderdale beach today. I love Florida! 

Dinner was organic pizza (Amy's) with a huge plate of greens drizzled in lemon and olive oil. With kombucha! So good for pizza lovers.

Sunday feast

I started the day with pineapple and watermelon. So good.

Then get ready for a new recipe! The Chocolate Ice Cream Shake! Made with 4 ingredients: 1 cup plant based ice cream, 1 1/4 cup almond milk, 2 tablespoons almond butter, 2 tablespoons hemp seeds. And added a teaspoon of Phresh Greens. 

Afternoon snack was cherries! 

Then ate this divine nectarine. So divine. 


Then this coconut meat/nut. Straight from the coconut. 

Then fried plantains. 

Dinner was this feast of brown rice pasta, Prawns/shrimp, broccoli, beans, shallots cooked in olive oil and honey. High in protein.

Eat antioxidants for energy

Started the day with big glass of water.

Then had this organic chicken sausage with organic ketchup. 

Then I had a grilled zuchinni.

Drank lots of water because then I went to the beach. Florida is paradise I am so grateful for this weather.

I went and got some waxing done today. I usually shave but lately am drawn to waxing and the smooth feeling after. When I was leaving the waxing place wanted me to buy some cream to ensure no ingrown hairs and to keep my skin smooth. Although I looked at the ingredients and realized I could make my own, minus the chemicals and preservatives. The basic base for it was aloe, tea tree and lavender. 

Later in the afternoon I was craving some icecream so I went shopping at the Fresh Market in Ft Lauderdale. I got this coconut milk ice cream sandwich yum thanks to So Delicious. 


For dinner I had cherries and raspberries! Mmm so divine! Natures candy! I was feeling a little sleepy before eating them and then after I was energized from all the antioxidants! 


At night I went for a swim and did some yoga in this penthouse pool! So awesome! Except the water is chlorine - not ideal - but that's what we have bentonite clay for! :) to absorb those chemicals.
